Notes

Top tips for making mocha syrup at home

  • Gather the necessary ingredients – good quality cocoa powder, superfine sugar (sometimes called bakers sugar or castor sugar), salt and vanilla extract. Plus make sure you put enough water in your kettle to boil.
  • When blending make sure you move the hand blender around to get all of the ingredients fully mixed.
  • The longer you blend the syrup, the smoother it will be. I usually blend for 3-4 minutes then check the syrup. If there are still any lumps or clumps that haven’t completely mixed, I give it another 2-3 minutes and check again.
  • Once it’s fully blended to a smooth syrup, leave it to cool before closing the lid.
  • Label the jar so you will remember which syrup is in it. AND put the date – so you know when to discard any syrup you have left over.
  • Store in the fridge for up to a few days, then discard any unused syrup. I only make small amounts with this recipe – to avoid the risk of much delicious syrup going to waste!
