What is simple syrup?
Simple syrup uses equal amounts of sugar and water, heated together to fully dissolve the sugar in the water.
You can use it to make coffee drinks and cocktails and when you are making a topping for desserts like ice cream sundaes.
The main benefit of using simple syrup is that it dissolves quickly in hot or cold beverages compared to regular sugar granules which take much longer to dissolve.

Best of all, it’s easy to make at home: just heat equal amounts of sugar and water on the stove until all the sugar has dissolved – no need for a thermometer or any special equipment!
What does simple syrup taste like?
Yes, you can (if you really want to) drink simple syrup. But it doesn’t have much flavor beyond being very very sweet – because it’s made from sugar and water.
Simple syrup only gets exciting when you use it as the base for other flavors. So you can make your favorite tasting coffees much quicker and at little cost!
For example, if you like peppermint lattes, you can steep peppermint teabags in hot simple syrup. Then simply add the peppermint simple syrup to coffee and foamed milk to easily make your own peppermint latte.

How to make simple syrup at home
As a keen coffee drinker, you know how important it is to have a sweet syrup to balance out the bitter taste of your java. But did you know that making your own simple syrup is incredibly easy and cost-effective? Here’s how to do it:
Equipment
- Saucepan for stove top
- Spoon
- Set of measuring spoons (optional)
Ingredients
- 1 cup water
- 1 cup sugar
Method
- Pour the sugar and water into a heavy-bottomed saucepan.
- Heat on low-medium heat whilst stirring the syrup.
- Continue stirring until the sugar has fully dissolved.
- Remove from the heat and allow to cool.
- Once cool, pour the simple syrup into a jar.
- Seal the jar and store in the fridge.

- First, gather your ingredients. All you need is equal parts sugar and water, a saucepan to cook them in and a spoon to stir the ingredients.
- Next, combine the sugar and water in your saucepan, and heat the mixture over medium-high heat. Stir occasionally until the sugar has completely dissolved. This should take about 5 minutes. You’ll know your syrup is ready when it looks clear and smooth.
- As with all cooking, this is a very enjoyable and fulfilling experience. But like all cooking, you need to take care and not rush any of the steps. Take care not to splash the syrup when it is hot, as it can burn.
- Once cooled, transfer syrup into a sterilised airtight jar so that you can use it when needed
- Don’t forget to label the jar so you will remember which syrup is in it. AND put the date – so you know when to discard any syrup you have left over.
- Store in the fridge for up to a two weeks, then discard any unused syrup. That’s why I made a small amount in this recipe – to avoid the risk of much going to waste!

Freezing simple syrup is an effective way to extend its shelf life, that way you can store it for up to six months in the freezer.
How to freeze simple syrup
- Let it cool to room temperature before transferring it to ice cube trays.
- When you want to use it, you can get out as many frozen cubes as you need. Either remove from the freezer and allow them to melt or heat them in the microwave to turn them back into a liquid.
Does simple syrup go bad?
Unless properly prepared, stored and used, all syrups can go bad. But here are some simple steps you must follow to minimise the risks of your syrup going bad:
- As with all cooking, make sure you thoroughly clean all of the equipment and tools you are going to use.
- Only use fresh and good quality ingredients.
- Sterilize the storage jar or bottle before you use it.
- When you label the storage container make sure you write the date you made the syrup on the label. That will help you to remember when to throw out any unused syrup.
- If the syrup starts to discolor or doesn’t smell good, pour it away and wash out the jar.
- Always remember, simple syrup is so quick and cheap to make, it’s always better to use it fresh and then make more when you need it!
